Barbera d'Asti Docg Superiore CUNSEJ

This great Barbera is produced from grapes exclusively coming from our old vineyards in Castagnole delle Lanze. The harvest, manual and handpicked, takes place in the first two  weeks of October; the grapes, “maniacally” selected, go straight to the vinification after few  hours.

The fermentation and maceration last for 12 days at 30°C temperature controlled, in  order to have the best extraction possible.

The malolactic fermentation keeps smooth the  acidity of the wine, typical of the Barbera, givin’ harmony and balance.

“Cunsej” is aged in small barriques for at least 9 months. Another 6 up to 9 months in the  bottle before the release. This is our baby “ Sichivej “.
